Now before you get confused, I will explain to right here and now that Bone Broth is essentially stock and was re-invigorated with the new name when Paleo and Keto diets first became household words some three to four years ago. So despite the new fancy name, let me tell you the benefits of breaking the "norm" and choosing a cup of boiled bones instead of your normal morning coffee.
The Collagen produced during the process of cooking down bones for long periods of time makes bone broths nutrient-dense, easy to digest, rich in flavour and have a number of health healing properties all in one small cup. Bone broth can be used to treat a number of ailments including; treatment of leaky gut syndrome, addressing food intolerances and allergies, improving joint health, reducing cellulite and boosting the immune system.
If you don't believe me, just ask the missus, she drinks this daily to get through a hectic day.
- 4 Chicken carcasses ensure these are from a pasture raised resource for the added benefits - no nasty antibiotic fed animals here!
- 2 tbsp apple cider vinegar or you can use lemons to help pull out the nutrients from the bones
Sprinkle some smoked salt on the chickens and roast the carcasses for about half an hour until they are nice and crispy. You can miss this step but I honestly think this adds to the flavour. Using the Himalayan salt just adds more nutrients and healing properties to the recipe.
Place bones into a slow cooker and cover with water and add the apple cider vinegar.
Cook slow and at low heat. Chicken bones can cook for 24 hours. If you are making a beef bone broth the bones can cook for 48 hours. A low and slow cook time is necessary in order to fully extract the nutrients in and around the bone. Be warned the kitchen is going to stink!
Allow the stock to cool and pour the broth through a sieve to catch all of the bone fragments and store in an air tight jar.
You can pour off a mug of broth, heat in the microwave for a pick me up drink and it has almost magical properties making your belly feel warm and happy. Don't be scared of the fat! This will melt down and tastes delicious! Alternatively use your homemade stock in recipes for added healthy benefits.
