CAMP DOUGHNUTS

It's hard to think of new and exciting dessert recipes for the barbecue. I can't be the only one who lacks enthusiasm after a massive meaty feast and just wants something quick, easy and sweet to polish off that meal.

So when the wife mentioned CAMP DOUGHNUTS - I was all ears. She explained that this was an all time favourite of the Girl Guides cooked over the camp fire.

In short it is a deep fried jam sandwich with the name classed up a bit so that you don't come across as an absolute filthy animal for deep frying something which quite frankly is sweet enough as it is. Ingredients

  • 2 slices white bread
  • 2 tbsp jam
  • 100 g plain flour
  • 300 ml milk
  • 1 egg
  • 2 tbsp sugar
  • vegetable oil for cooking

Instructions

  1. Begin by adding approx 3cm of vegentable oil to a cast iron pan and placing over direct heat.

  2. To make the batter mix the flour, milk and egg with a whisk until combined and there are no more lumps.

  3. Spread one slice of bread with jam then sandwich with the other slice of bread. Remove the crusts and cut into triangles.

  4. When the oil reaches 170 - 175 C you are ready to fry the doughnit. You can check if the oil is hot enought by pouring a teaspoon of the batter in and if it starts to bubble, it's ready.

  5. Dip each side of the sandwiches in the batter coating completely then gently lower into the oil.

  6. Allow the batter to cook until golden, then flip and repeat on the other side. Remove and place onto a kithcen towel to remove any excess oil.

  7. Pour the sugar into a bowl. Using tongs dip each side of the doughnut into the sugar coating completely.

  8. Allow the doughnut to cool before eating, but still eat whilst slightly warm. Amazing. Well done Girl Guides.
