CHICKEN BACON AND PINEAPPLE TOWER

A delicious and healthy summer spectacular - carved like a big old kebab of deliciousness means you have a medley of meaty, salty and sweet pleasures doing the hula in your mouth. Not feeling the faff of the tower? thread the same ingredients on to metal skewers for the same effect and reduce the cooking time.

Ingredients

  • 3 to 4 large chicken breasts
  • 6 slices streaky bacon
  • 1 pineapple
  • 2 tbsp Jacks Meat Dust

Instructions

  1. Preheat the grill to 200C.
  2. Dice the chicken breasts into chunky cubes and coat evenly in Jacks Meat Dust.
  3. Cut off the base of the pineapple with enough depth left to poke the base of four wooden skewers so they stand upright. Cut off the top of the pineapple.
  4. Remove the skin from the middle of the pineapple and cut into similar sized pieces to the diced chicken.
  5. To assemble the tower: Add a layer of chicken by threading to the base of the pineapple on to each of the four skewers. Repeat the process with a layer of pineapple chunks. Add a layer of bacon by placing two strips of bacon in a cross above the layer of pineapple.
  6. Repeat this process until you reach the top of the pineapple alternating a layer of meat with a layer of pineapple; Chicken, pineapple, bacon, pineapple etc
  7. Place the tower on the grill... if you're a master tower builder perhaps it will go on vertically, if not horizontally is just as impressive!
  8. Grill for approximately 45 minutes to one hour until the chicken has reached 75C.
  9. Serve on a big board, carve and enjoy.
