CHRISTMAS CRANBERRY CAKE
This is a perfect finisher to the main event on 25 December but is jut as good any other time of the year. If like me you never see a cranberry until December you can easily swap these out for blueberries or strawberries.
This is a perfect cake for the barbecue due to it's thick batter consistency which guarantees a fail safe cake for even the worst baker without having to worry about it rising or falling - just make sure it doesn't burn!
The cranberries offer a lovely tart element to the sweet cake mix and with the addition of white chocolate this has all the elements of a great dessert!
Ingredients
- 3 eggs
- 400 g white sugar
- 250 g plain flour
- 185 g butter softened
- 1 tsp vanilla extract
- 300 g cranberries
- 1 pack whuie chocolate chips
Instructions

Preheat the grill/ oven to 180C.

Beat the eggs and sugar in a mixer for approximately 5 minutes.

Add softened butter and vanilla and switch the mixer motor back on.

Slowly add the flour in stages until the mixture becomes a thick batter.

Once combined, switch off the mixer and remove the beater. Add the cranberries and the chocolate chips and mix with a wooden spoon being careful not to over mix.

Add the mixture to an oven proof dish and bake for approximately 45 minutes or until a skewer comes out clean.
