GRILLED CORGUETTES
In the summer this is Mrs Shack's favourite side dish. Fresh off the grill with a slightly charred taste corguettes are a fabulous, healthy and filling addition to any of your favourite grilled meats. Ingredients
- as many corguettes as needed to feed your brood
- 1 tsp salt
- lemon juice optional
- feta or grated parmesan to top also optional
Instructions

Preheat your barbecue to 200C.

Cut the ends off the corguettes, cut in half, then cut longways into 1cm strips. You will normally get about three strips from one corguette depending how big they are.

Sprinkle with the salt which will draw the moisture out. Optional to add your lemon juice here.

Allow to rest for about 10 minutes before transferring to the grill. Grill for about 5 minutes each side until you see those lovely grill marks.

If you so fancy, top with crumbled feta or grated dried parmesan. Serve and enjoy with your favourite mains.
