What speaks Americana more than a slab of warm sweet pie? When I think pie I think diner, big old milkshake in hand and a hard hit of sweetness surging through my body like an embracing sweet hug.
We’ve come up with this extremely easy berry pie with an extra surprise inside – toasted melted marshmallows. I mean c’mon, marshmallows, pie crust and sweet, sugary fruit all cooked up in less than an hour with absolutely no fuss? Sounds like a winner to me!

Ingredients
- 1 pack ready made shortcrust pastry
- Frozen berry mix thawed
- 130 g sugar
- 3 tbsp cornflour
- 1 tsp vanilla extract
- Handful of marshmallows
Instructions

Add the berries to the bowl along with the sugar, cornflour and vanilla and give it a mix

grease a pie dish and line with the shortcrust pastry. Add the berry mix.

Evenly distribute the marshmallows on top of the berries.

You can have an open pie, lattice strips across, cover completely with pastry - get creative!

Bake in a preheated oven at 190C for about 30 minutes until the pastry is golden and the marshmallows are gooey and melted. Serve thick slabs with custard or ice cream.
