PEANUT BUTTER DARK CHOCOLATE BACON FLAPJACKS

Yep.  You heard me right.  I could marry the missus all over again for inventing this little number.  You could have a long old summary about the joys of flapjacks or some connotations about bacon but really, is it necessary?  Peanut Butter.  Good.  Bacon.  Good.  Chocolate.  Good.  Flapjacks.  Good.  Just get them in your pie hole!

Ingredients

For the bacon toppings

  • 2 packs Bacon lardons
  • 4 tbsp Brown sugar
  • 2 Tbsp Jack's Meat Dust

For the flapjack base

  • 500 g Good quality rolled oats
  • 250 g Peanut butter
  • 250 g Golden syrup
  • 150 g Butter
  • 150 g Brown Sugar
  • 200 g Dark Chocolate chips

Instructions

  1. To prepare the bacon toppings chop your bacon into small pieces and half into two bowls.  Coat the bacon in one bowl with the brown sugar and the other with meat dust.
  2. Fry off the bacon in two frying pans until nice and crispy and set aside.  Try not to eat too much bacon as you go along!
  3. To make the flapjacks melt the peanut butter, golden syrup, sugar and butter on the stove or in the microwave until combined and give it a quick mix.
  4. Add the oats and the dark chocolate chips and mix to a thick mixture.
  5. Separate into two baking dishes and flatten the tops smooth.
  6. Top each dish with the different kinds of bacon OR if you're feeling particularly fruity you could try mixing the bacon up!
  7. Bake at 170C for 20 to 30 minutes until the oats have turned golden brown.  Allow to cool completely before cutting into perfect flapjack squares.  Enjoy with a nice cup of tea!
