PRIMAL CUT TOAD IN THE HOLE

- 4 Primal Cut Sausages we used the Cambridge sausages
- 100 g chickpea flour
- 2 eggs
- 250 ml milk
- pinch Smoked salt
If you have the time (and you're organised enough) prepare the batter the night before and refrigerate overnight. In a large bowl add the flour, smoked salt and eggs and whisk together until a thick batter.
Brown the sausages in a cast iron skillet with a little oil. They should be browned, but not cooked all the way through.
Add the batter to the cast iron skillet coating the sausages and put in the oven.
Check on the batter between 15 and 20 minutes. You'll known you're ready when the batter has risen and has a golden brown colour.
