SIMPLE PIZZA DOUGH AND SAUCE

Who in their right mind doesn't like pizza? I mean it has all of the ingredients of a masterpiece right there... carbs- check, plenty of cheese- check, the gift of piling on your favourite ingredients? check, check, check. After getting hold of an Ember woodfired oven, my pizza game has most definitely excelled. After trying a few different dough recipes, I landed on the perfect one courtesy of All Things Barbecue. I find myself making twice the amount stated in the recipe and freezing some so it's right there ready for me when that pizza craving comes a-calling. As for toppings I would definitely recommend the following, all of which I have tried and tested:

Breakfast pizza: sausage, mushrooms, bacon, black pudding and fried egg

Meaty madness: All of the good things found on the deli counter; pepperoni, iberico ham, mozzerella and olives

Buffalo soldier: buffalo chicken thighs, jalapenos, sweetcorn and plenty of cheese

Ingredients

For the pizza sauce

  • 1 can tinned Tomatoes
  • 1 clove garlic minced
  • 1/2 tsp salt

For the pizza dough

  • 325 g warm water 40C
  • 5 g dry active yeast
  • 500 g “00” Flour
  • 10 g salt

Instructions

To make the sauce

  1. Combine the tinned tomatoes, minced garlic, and salt with a hand blender until smooth. Refridgerate until ready for use.

To make the dough

  1. Pour the warm water into the bowl of a stand mixer. Sprinkle the yeast over the water.
  2. Add the flour, then the salt. Using a hook attachment, mix on medium-low until flour is incorporated and a dough ball forms taking approximately 8 - 10 minutes.
  3. Transfer the dough to an oiled bowl and cover. Let the dough rise until doubled in size.

To build your pizza

  1. Turn the dough out onto a floured surface and divide into three portions for three pizza bases. Roll each third into a ball, wrap in cling film and refrigerate for at least half an hour.
  2. When ready to build the pizza, roll the dough out evenly using a combination of a rolling pin and stretching the dough out by hand until about 1 cm in thickness all round. This should take some time and love as if you've mixed the ingredients correctly the dough should be elastic and will try to shrink back.
  3. When you've rolled out the dough, transfer to a tray or peel and add the tomato sauce and your toppings.
  4. Preheat your Wood-Fired Oven, barbecue grill or household oven according to the appliance you are using. Allow to heat fully before adding the pizza in to cook until the dough is just starting to show a golden colour and the cheese has fully melted. Cooking times will vary depending on what appliance you are using. A woodfired oven will take approximately 90 seconds at 400C whereas a household oven can take up to 10 minutes at 190C.
  5. Serve on to a wooden board, cut into triangles and enjoy!
