TRASH CAN NACHOS

After a bit of a stint of creating lean recipes I was in the mood for something just that little bit disgusting. Well even the name of this devillishly naughty dish gives the game away, we're talking piles upon piles of dirty little nachos loaded with all the good things in life - salsa, guac, refried beans, sour cream and of course... plenty of cheese.

The ingredients in this dish have deliberately been made for ease using store bought packs and jars to quickly assemble for an easy party dish. You could always swap out ingredients for something a bit more fresh like Jack's Smashing Salsa for a bright zingy flavour (see below).

Ingredients

  • 500 g cooked beef shredded brisket, minced beef, chuck steak, beef rib, cooked according to directions
  • 500 g grated cheese mature, mexicana - your favourite!
  • 1 jar salsa
  • 1 jar guacamole
  • 1 pack sour cream
  • 1 tin refried beans

Instructions

  1. Cook your beef according to the required instructions. You could of course use anything here - cooked chicken, pulled pork, you could even have these MEAT FREE...

  2. Heat the refried beans according to the packet instructions.

  3. With the grill on at 200C start assembling the trash can. Add a layer of nachos to the bottom of the can then add a layer of cheese then beef.

  4. Add another layer of nachos, a layer of cheese then a good spponful of salsa, guac, sour cream and refried beans.

  5. Continue with these two steps until your trash can is full. Plenty of cheese means loads of cheddary taste and more likeliness that the tower will stick together...

  6. When the trash can is full heat on the grill for a couple of minutes with the lid closed to get the cheese melted.

  7. Place a plate at the open end of the trash can and tip the whole lot up side down so that the nachos form a tower on the plate.

  8. Serve immediately to enjoy that oozy cheesey goodness.
