PRIMAL CUT TOAD IN THE HOLE

The best comfort foods known to man, sausages and Yorkshire puddings come together to make a comfort dish which will feel as good as your oldest most comfortable slippers.  A tasty homemade treat ready in less than half an hour.

But what could be better than that?  knowing that you're doing your gut a favour by going grain free by selecting good quality, Paleo approved sausages from www.primalcut.co.uk and making the batter completely grain free.  Your waistband will thank you for it.

Ingredients

  • 4 Primal Cut Sausages we used the Cambridge sausages
  • 100 g chickpea flour
  • 2 eggs
  • 250 ml milk
  • pinch Smoked salt

Instructions

  1. If you have the time (and you're organised enough) prepare the batter the night before and refrigerate overnight.  In a large bowl add the flour, smoked salt and eggs and whisk together until a thick batter.

  2. Brown the sausages in a cast iron skillet with a little oil.  They should be browned, but not cooked all the way through.

  3. Add the batter to the cast iron skillet coating the sausages and put in the oven.

  4. Check on the batter between 15 and 20 minutes.  You'll known you're ready when the batter has risen and has a golden brown colour.
