WICKED WHITE CHOCOLATE FUDGE WITH COCONUT

I've got to say I have been enjoying Mrs Shack's fudge experimentations recently.  All this taste testing has given me enough of a sugar high to shoot to the moon.  I have in fact been behaving like a naughty kid all day.

This is a totally different sensation to the Bis-coffee fudge and is harder with a lighter flavour, a bit like a coconut ice.  Now which one is my favourite.... decisions decisions...

Ingredients

  • 400 g vanilla frosting
  • 400 g white chocolate
  • Dessicated coconut

Instructions

  1. Melt the white chocolate in a glass bowl over a saucepan of water until about half melted then add the frosting.  Continue over the heat until the chocolate has melted.
  2. Mix until combined.
  3. Pour the yummy white mix into a greased baking tray and top with a layer of coconut.
  4. refrigerate over night then cut into bite size squares.
