PROTEIN PIZZA

I do love a pizza and I mean a proper doughy thin crust made with lovely pizza dough so I was sceptical the first time Mrs S suggested making the crust entirely out of turkey mince.  "It's low carb" she says.  Well, being the owner of a Meat Shack I could hardly say no could I?  And I was pleasantly surprised.  This recipe really reminds me of summer when we get the pizza stone out on the Weber, but it's just as good done in the oven during the colder months too.  In fact it's so tasty that you could very easily forget that it's healthy.  You can of course use any type of meat that you like but we always use turkey as it's the missus favourite.

Ingredients

  • 400 g pack of Turkey mince breast or thigh depending on your taste and goals
  • 1 tsp salt
  • 1 tsp pepper
  • 1 tsp garlic powder
  • 1 tsp mixed herbs
  • 2 tbsp passata or tomato puree
  • 1 tsp Jack's Meat Dust optional
  • Toppings of your choice suggestions: cheese, peppers, leftover cooked meats, olives, onions, peppers, sweetcorn, artichokes, mushrooms

Instructions

  1. Preheat the oven to 180C.
  2. In a mixing bowl add the turkey mice and the seasonings with your hands. mix well.
  3. flatten the ball of meat on a baking tray into a circular pizza shape the pop it into the oven to bake.

  4. Warm through your toppings and cook any onions, peppers etc so that they are almost cooked all the way through.
  5. After baking for ten minutes take out the baking tray and flip the pizza over.  Mix the tomato sauce with the meat dust and spread a layer over the bottom of the base.

  6. Top your pizza - me and the missus normally go half and half with our favourite toppings.  Mine is normally covered in cheddar, pepperoni and bbq sauce whereas the missus prefers goats cheese, spinach and veggies.

  7. Bake for another ten minutes until the cheese has melted then cut into quarters and enjoy with a nice salad.
