GRILLED PEACH COBBLER

This is a ridiculously easy dish to make and perfect for large get togethers. You can double up the recipe easily to make a bigger version so there is plenty to go round. The fruity sugary combination is the perfect end to a plate full of salty barbecue.

Ingredients

For the fruity filling

  • 5 fresh peaches
  • 75 g sugar
  • 1/4 tsp nutmeg
  • 1/2 tsp cinnamon

For the biscuit topping

  • 100 g butter use coconut oil for a vegan version
  • 150 g sugar
  • 2 tsp vanilla
  • 150 g plain flour
  • 1 tsp baking powder
  • 1/4 tsp salt

Instructions

  1. Preheat the grill to 180C.

To make the fruity filling

  1. Slice the peaches in half and place on the grill over direct heat.

  2. Grill until marks form over the flesh then remove and place into a large greased skillet pan.

To make the biscuit topping

  1. Melt the butter and add to a mixing bowl with the flour, sugar, vanilla, baking powder and salt until it forms a nice biscuit dough.

  2. Grab a handful of dough at a time and make rough round biscuit shapes and lay on top of the grilled peaches.

  3. Place in the grill on indirect heat for approximately 25 minutes or until a lovely golden colour.

  4. Serve lovely fruity dollops to your waiting guests with vanilla ice cream and enjoy!
