WHOLE BEEF FILET

Filet steak really is a treat. A whole filet is like a kid being locked in a sweet shop overnight. Perfect for a really fancy family barbecue or even as a date night treat, grilling up a whole joint of filet and then carving at the table will really set to impress. Use this simple reverse sear method to get the taste buds tingling.

Ingredients

  • 1 kg beef filet
  • 1 tbsp multi purpose rub we used meat dust

Instructions

  1. Preheat the grill to 130C.

  2. Season the beef fliet evenly and all over with the multi purpose rub.

  3. Place the beef on the grill on indirect heat the internal temperature reaches 47C.

  4. Remove from the grill and allow to rest for 5 minutes.

  5. Crank the grill up to earing temperature to 230C +

  6. Sear each side for 1 minute until the internal temperature reaches 55C. This will produce a beautiful medium rare steak. Adjust to 57C if you prefer medium.

  7. Slice immediately - the steak has already rested and is ready for eating with chips and peas!
