PALEO SLOW COOKER GINGERBREAD CAKE

I LOVE GINGERBREAD.  There I said it.  I love gingerbread men, gingerbread houses, gingerbread snaps.  Just all things gingerbread.  I did try some crystallised ginger once at Mrs Shack's insistence and it was bloody horrible.  "It's exactly the same" she says.  It's bloody not.  Stick to the cakes and treats my friends.

Talking of treats, why not give this paleo version a go.  I've met half way with Mrs, ditching the sugar for a healthy version which is paleo friendly, dairy and sugar free.  And she says I'm addicted to sugar...

Ingredients

  • 100 g Ghee
  • 100 g honey
  • 10 eggs
  • 1 1/2 tsp vanilla
  • 150 g Black treacle
  • 150 g coconut flour
  • 1 tsp baking soda
  • 1 1/2 tbsp ginger
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/2 tsp allspice
  • 1/2 tsp Cherry smoked salt

Instructions

  1. Mix the ghee and honey in a mixer

  2. Add the eggs and vanilla to the butter mix.

  3. Mix the treacle with water in a measuring jug.  In a separate bowl stir the flour and spices then add the wet ingredients to the dry ingredients.  Add to the mixer.

  4. Pour the batter into a slow cooker greased with coconut oil and cook on low for 2 to 2 and a half hours.

  5. Allow to cool before serving.
