Nothing screams comfort food like a chocolate chip muffin. One little bite will send you careering back to childhood and then... that oh so gooey centre right in the middle. Massive, happy smiles all round. Enjoy for breakfast or a cheeky little dessert, these are just perfect little pockets of tastiness.
I have used a cookie butter (Biscoff) filling inside these muffins but there are so many chocolate spreads, peanut butters and the like in the aisles of the supermarket, feel free to go wild.
Preheat the oven to 180C.
Plonk the flour, sugars, chocolate chips, baking powder and baking soda in a mixing bowl and mix, covering all of those lovely chocolate chips.
Add the beaten eggs, butter, vanilla essence and milk to the dry mix and blend together just so there are no lumps left. Don't over mix.
Prepare a muffin tin with muffin cases. You'll get 12 to 15 muffins out of the batch. Spoon in a spoonful of the muffin mix into each of the cases, add a heaped teaspoon of filling and then add another spoonful of muffin mix on top encasing the filling. Each case should be about 2/3 full giving the muffins enough room to rise.
Pop the muffins in the oven for about 15 minutes until golden and baked through. Allow to cool then enjoy!
