BIG KAHUNA BURGER

I bloody love Pulp Fiction. Probably the best film that Tarantino has put there. And it is unquestionable that the greatest scene is that with the Big Kahuna Burger.

Now the Big Kahuna Burger is in fact a fictional burger and by the looks of things from that particular scene is pretty much a standard smash patty cheese burger. But as it is fiction I've let my imagination run wild with this one in ode to Vincent Vega and Jules Winnfield in that marvellous cult classic.

We've got burger patties, grilled chicken breast, bacon, burger cheese and a griddled pineapple and onion salsa in a brioche bun. As Jules would say... "this is a tasty burger"...

Ingredients

  • 2 burger patties
  • 1 chicken breast butterflied
  • 1 tsp Jacks Meat Dust
  • 4 slices streaky bacon
  • 2 slices American singles cheese
  • 1/2 pineapple
  • 1 onion
  • 2 brioche buns

Instructions

  1. Preheat the grill to 180C.

To make the pineapple salsa

  1. Cut the pineapple up into chunks for grilling and finely dice the onion.

  2. Sweat the onions in a cast iron pan and grill the pineapple until little charred onthe outside.

  3. cut the pineapple into chunks and leave a handful to the side. Place the onions and pineapple into a blender and pulse for a few seconds until a tough paste. Add the last handful of pineapple so that you have a few chunks and mix well.

To assemble the burgers

  1. Lightly coat the butterflied chicken breast with Jack's Meat Dust or your favourite rub and place on the grill. Turn after approximately 10 minutes to get an even cook with some great grill marks. After approximately 10 minutes place a piece of american singles cheese on top of each piece of chicken to melt. Remove the chicken from the grill when the internal temperature reaches 75C.

  2. Grill some streaky bacon until your desired crispiness alongside some burgers until the internal temperature of the burgers reaches 55C.

  3. Assemble the burgers, cheesey chicken breast, bacon and a dollop of pineapple salsa in a brioche bun and enjoy.
