VALENTINES RED VELVET BROWNIES

Roses are Red,

Violets are Blue,

This luscious dessert,

Is especially for you.

I don't know what more I can say to describe just why this is the perfect dessert for Valentines Day.  Red Velvet cake brownie topped with white chocolate ganache and a Jammy Dodger this gooey sticky delight is sure to put a smile on the face of your loved one.

The secret is very simple... use a cake box mix for the base to save oodles of time and nail the brownie base.  And no it's not cheating.  I've spoken to a number of wedding cake makers who have confirmed that they use several cake box mixes when making their creations... so if it's good enough for them, it's good enough for the shack!

Ingredients

For the Red Velvet Brownie

  • 1 box Red Velvet Cake mix

For the white chocolate ganache

  • 225 g white chocolate
  • 125 ml double cream

For the topping

  • 1 pack Jammy Dodger biscuits

Instructions

To make the Brownie

  1. Mix up the cake box mix following the instructions but as above you can sub some of the ingredients for an extra moist cake.  See Jack's Hacks below to see how it's done.

  2. Bake the cake (brownie) for the time as per the box instructions.  When it come out of the oven if the middle has risen you can place a tea towel over the cake whilst it is still warm and press down lightly to flatten the cake so it's all one level.

  3. Allow the cake to cool completely.

To make the ganache

  1. Warm the cream in a saucepan either in the microwave or in a saucepan until it is just away from starting to bubble.  Add the chocolate and stir, stir, stir until it has completely incorporated.

  2. Top with Jammy Dodgers and allow to cool completely before releasing from the baking tin and cutting into perfect brownie squares.

JACK'S HACK #1: For an extra rich cake when using a cake box follow the instructions for the additional ingredients HOWEVER replace water with milk, sub oil for butter and and an extra egg!
