CHICKEN BACON AND PINEAPPLE TOWER

There’s something magical about the combination of juicy chicken, crispy bacon, and sweet pineapple that takes you straight to paradise. This Chicken Bacon and Pineapple Tower is a playful stack of smoky, savory, and tropical flavors that’s perfect for those days when you want your barbecue to have a little extra flair. Whether you’re sharing it with friends on a sunny afternoon or just indulging in a treat that feels like a mini vacation, this recipe will have you savoring every layer.

 

INGREDIENTS

  • 3 to 4 large chicken breasts
  • 6 slices streaky bacon
  • 1 pineapple
  • 2 tbsp Texas Rodeo
  • Preheat the grill to 200C.

 

INSTRUCTIONS

 

Preheat the grill to 200°c and set up for two zone cooking.

Dice the chicken breasts into chunky cubes and coat evenly in Texas Rodeo seasoning.

Cut off the base of the pineapple with enough depth left to poke the base of four skewers so they stand upright. Cut off the top of the pineapple.

Remove the the skin of the middle portion of the pineapple, remove the skin and core and cut into chunks.

To assemble the tower, add a layer of chicken by threading to the base of the pineapple on to each of the four skewers. Repeat the process with a layer of pineapple chunks. Add a layer of bacon by placing two strips of bacon in a cross above the layer of pineapple.

Repeat this process until you reach the top of the pineapple alternating a layer of meat with a layer of pineapple; Chicken, pineapple, bacon, pineapple etc

Lie the tower down on indirect heat and close the lid to allow the meats to cook.

Grill for approximately 45 minutes to one hour until the chicken has reached 75C.  Finish off by move the tower over to direct heat to add some colour to the outer layer.

To serve, carve or pull off portions of chicken bacon and hot charred pineapple and enjoy!
