Indulge in the delicious fusion of flavors with this Chicken and Fruity Slaw Ciabatta Sandwich. Marinated grilled chicken breast is nestled within a soft, toasted ciabatta roll, accompanied by a vibrant and refreshing fruity slaw. This recipe is perfect for a quick lunch or a delightful dinner, offering a burst of freshness and flavor in every bite.
- 2 chicken breasts
- salt and pepper to taste
- 1 carrot
- 1 apple
- 1/2 pack celery
- 100 g dried cranberries
- 1 tbsp greek yoghurt
- 1 tbsp mayonaise
- 1 tbsp butter

preheat grill to 200°C.

prepare the slaw by peeling and grating the carrot and apple and adding to a mixing bowl. Chop and add the celery into small pieces, then add the cranberries, yoghurt and mayonnaise and mix well.

place the chicken breasts in a zip lock bag and hammer flat to cook evenly. Season well with salt and pepper.

place the chicken breasts over direct heat and grill until golden on each side and the internal temperature reaches 75°C. Remove from the grill and allow to rest for a few minutes whilst preparing the ciabatta.

Slice the ciabatta in half and butter on each side. grill butter side down to achieve grill marks and lightly toasted in flavour.

assemble your sandwich by slicing your chicken into thin pieces and adding to the bread and adding a good helping of slaw. Enjoy!
