  • 120 g butter softened
  • 75 g light brown sugar
  • 75 g caster sugar
  • 1 egg
  • 1 tsp vanilla
  • 200 g plain flour
  • 1/2 tsp bicarbonate of soda
  • 200 g chocolate chips

  1. Preheat the grill to 180°C.
  2. Cream the butter and sugar in a food processor with whisk attachment until light and fluffy.
  3. Beat in the vanilla and the egg until combined.
  4. Remove the whisk, then add the flour, bicarbonate of soda, chocolate chips and salt with a wooden spoon.
  5. Spoon the mixture directly on to your pizza stone or greased baking tray in large spoonfuls- whatever you choose to use to bake in your grill, just ensure it is non stick.
  6. Bake for 10 - 12 minutes or until firmed at the edge but squidgy in the middle.
  7. Leave to cool for a few minutes before transferring to a wire rack or if you prefer your cookies warm… dig right in!
