It is sanctimonious that we must eat far too much turkey at Christmas, after all it’s a tradition. Long gone are the days however where turkey was considered a dry meat to be washed down with plenty of mulled wine to get it down your gullet. Done correctly and with plenty of love, turkey is a beautifully succulent and tender meat which deserves just as much love with it’s leftovers as it does on Dinner Day. So scrap your turkey curry and turkey sandwich recipes this year and go for something really quite epic to get your taste buds tantalised with this truly delicious Christmas smash burger.
CRANTURKBRIE BURGERS A.K.A CHRISTMAS BURGER
Ingredients
- 500 g 80/20 minced beef
- salt and pepper to taste
- 4-8 slices burger cheese
- 2 brioche buns
- 6-8 slices leftover turkey
- Brie cheese sliced
- 4 tbsp cranberry sauce
Instructions

Season the minced beef with salt and pepper, weigh into 125g balls and set aside.

When ready to cook, heat a large cast iron pan or flat griddle over direct heat. Place balls in the skillet or on the skillet, ensuring there is room for them to be smashed down.

After approximately 30 seconds of searing, smash the burgers with a spatula or similar barbecue utensil until flat. Allow burgers cook for about 3 to 4 minutes, or when the edges start to turn brown.

Flip burgers over and immediately place 1 or 2 slices of burger cheese on top of each patty. add brie on top of two of the four burgers and cover each burger with a bowl which will allow the cheese to melt.

Allow two minutes for the cheeses to melt then remove from the heat. As smash burgers are very thin they do not take long to cook at all.

Ensure your burger buns have been lightly toasted before assembling your burger in the following order going up: bun, burger with burger cheese, sliced turkey, 2 tbsp cranberry sauce, burger with burger cheese and brie and bun.
