EASY SPANAKOPITA

Spanakopita is one of my all time favourites which I would frequently treat myself to when passing by a mediterranean supermarket. It had to be one I could readily make myself and often comes out as a side dish when we have barbecues. It's always a massive hit and I am yet to have any leftovers.

Spanakopita for those of you who don't know is a mix of cheese and spinach with herbs wrapped in filo pastry and then baked. So why is this the "Easy" Spanakopita recipe? well most of the ingredients are included in our Ranch multi purpose rub so it is a case of adding a few tablespoons in with spinach, feta and a beaten egg and your filling is good to go.

This version has been made into a spiral as it really is a thing of beauty when dishing up to your guests - check out the video to watch how it's done- it really is simpler than it looks.

Ingredients

  • 500 g spinach
  • 200 g feta
  • 1 egg beaten
  • 125 g melted butter
  • 3 tbsp Ranch multi purpose rub
  • 18 sheets filo pastry you may need more/ less - 2 packs from the supermarket
  • Sesame seeds

Instructions

  1. Preheat the oven to 180C.

  2. blanch the spinach so it is wilted, allow to cool and drain. Remove as much of the excess water as possible with the tea towel.

  3. Chop the spinach and the feta into small pieces and add to a mixing bowl.

  4. Add the beaten egg and the Ranch rub an mix to combine.

  5. Take the filo out of the packaging and place between two dampened tea towels. This will prevent the pastry from drying out and flaking.

  6. Lay three sheets of filo out side by into one long sheet. Use the pastry brush to "glue" together using the melted butter.

  7. Using the pastry brush, spread melted butter all over the layer of pastry and then add three sheets directly on top, again glueing together.

  8. Do this one more time so that you have three sheets of pastry stacked on top of each other. If my maths is correct this is 9 sheets of pastry in total.

  9. Add a line of the spinach/ feta mix approximately 2-3 cms in from the side of pastry closest to you. fold the pastry over and roll until you reach the far end.

  10. Take the spring foam pan and coil the long filled pastry around the outside of the tin to start and work your way inwards.

  11. Repeat this process to create another long spinach/ feta pastry and add this to the coil until you reach the middle.

  12. Brush the top of the spiral with melted butter and sprinkle on sesame seeds.

  13. Bake for 45 - 50 minutes until the patry has turned golden then cut and serve. Watch the video to hear that glorious crunch at the end!
