FIRE ROASTED CHIMICHURRI
This is literally my GO TO steak seasoning, I absolutely adore it and get students to make it in every class I do as it always gets compliments. The tang and sweetness of the vegetables compliment the salty steak absolutely perfectly, I love it. Give it a go!

Ingredients
- 1 red pepper
- 4 tomatoes
- 5 spring onions
- 1 red onion
- 1 red chilli
- 50 g parsley
- 4 tbsp olive oil
- 2 tbsp red wine vinegar
- salt and pepper to taste
Instructions

Place red pepper, tomatoes, spring onions, red onion and red chilli in a roasting tray on direct heat.

Roast until the skins on the pepper turn black and the other vegetables are charred.

Remove from the oven and cover the whole tray with tin foil and allow the vegetables to sweat.

Remove the burnt skin from the pepper and onion and discard the outer layer, seeds and stalks.

Add all the ingredients into a food processor and add parsley, olive oil, red wine vinegar and salt and pepper to taste.

Blitz until smooth.
