GOOEY WHITE CHOCOLATE BANANA BREAD

Well you know how we look to take a classic recipe here at the Shack and make it even more epic by adding in all of our favourite ingredients to make it even more epic??  Well this banana bread is no different.  We thrown everything at this recipe to make it a hybrid of bread and cake with a hint of Rocky Road... brilliant.

Ingredients

  • 140 g butter
  • 140 g caster sugar
  • 2 large eggs beaten
  • 140 g self-raising flour
  • 1 tsp baking powder
  • 2 very ripe bananas
  • Pink and white mini marshmallows
  • 200 g bar of white chocolate
  • handful of dark chocolate chips

Instructions

  1. Heat oven to 160C
  2. Butter a loaf tin ready for the mixture.
  3. Cream the softened butter and 140g caster sugar until light and fluffy either in a mixer or by hand, then slowly add 2 beaten large eggs.
  4. Add the baking powder to the flour and slowly fold into the mix.
  5. Mash the bananas in a bowl until creamy then add the to the mix with the chocolate, marshmallows and chocolate chips.
  6. Pour into the tin and bake for about 30 mins until a skewer comes out clean.
  7. Cool in the tin for 10 mins, then remove to a wire rack.
