GRILLED CHICKEN KIEV
Golden, garlicky, and oozing with buttery goodness — this BBQ Chicken Kiev takes the classic comfort food and gives it a smoky, flame-kissed glow-up. Forget oven-baked, this one’s pure grill-side indulgence.
Ingredients
- 2 large chicken breasts
- 50 g butter softened
- 2 garlic cloves minced
- Handful of fresh parsley finely chopped
- Zest of ½ lemon
- Salt & pepper
- 1 egg beaten
- 50 g plain flour
- 100 g panko breadcrumbs
- 500 g baby new potatoes
- 2 tbsp olive oil
- 1 tbsp coarse seat salt
- Fresh thyme or rosemary

Preheat the grill to 200°c and set up for two zone cooking with a flat surface inserted.

Mix the butter with the garlic, parsley, lemon zest and refrigerate until it has began to harden but not fully solid.

Cut a pocket into the side of each chicken breast. Stuff with garlic butter, then place into the fridge chill again to firm up.

Build a dredging station with three bowls of flour, egg and breadcrumbs. Dust each chicken breast all over in flour, then dip in the egg, then coat in the breadcrumbs.

Boil new potatoes for 10 mins, then toss in oil, salt, and herbs.

Heat some butter on the flat surface and lay done the chicken. Grill the chicken indirectly with the lid closed until golden and cooked through ( about20–25 mins).

Grill potatoes over medium flame until crispy and charred. Optionally smash the potatoes with a grill press to create a crispy exterior.

Serve with lemon wedges and salad.
