HOT SMOKED MUD SAUCE SALMON
Ditch the meat and opt for a tasty hot smoked salmon for a tasty treat that's chock full of health benefits being an excellent source of high-quality protein, vitamins and minerals but most importantly a smashing content of omega-3 fatty acids for that all needed ‘brain food’.
The addition of the sweet and spicy peanut mud sauce brings the flavour the fish to another level. Try not to go back for seconds!
Ingredients
- 1 kg salmon fillet
- 60 g smoked salt
- 60 g sugar
- 500 ml water
- 2 tbsp mud sauce recipe details below
Instructions

Brine the salmon over night by adding the salt, water and sugar together in a sealed container with the fish until ready to cook.

When ready to cook rinse the excess sugar and salt off of the fish.

Preheat your smoker to 180C. Place the fish on greaseproof paper, tin foil or a cedar wood plank and get on the smoker to cook slowly for approximately 10 minutes.

Heat the mud sauce in a skillet until melted and brush liberally over the flesh of the salmon. Allow to cook for a further 10 minutes.

After the additional ten minutes get the salmon off the grill and shred into bite size chunks. Serve with salad and your favourite sides.
