JACK'S CHUCK IT ALL IN ROCKY ROAD

Rocky Road is such an easy dessert that even I can make it and best of all I'm yet to find anyone who doesn't like it OR who can only have one piece.  So it's always my go to sweet if I'm low on time or Mrs Shack is getting her hair done instead of making a cake.

I have followed recipes previously until I realised you can literally throw anything in with melted chocolate and it will taste good so that's what I do - raid Mrs S's cake cupboard, like what I see and in it goes.

Everything is by eye as well no need to weigh anything out, as long as there is enough melted chocolate to glue it all together then you're good to go.  My recommendation though is you have one type of biscuit for crunch, dried fruit and definitely mini marshmallows.

Ingredients

  • 4 bars Your choice of chocolate, white, milk, dark or even Caramac!

Any or all of the following

  • nuts
  • crushed biscuits
  • Dried fruit
  • Mini Marshmallows
  • glace cherries
  • Smarties, rolos, reeces pieces etc etc
  • crushed meringues

Instructions

  1. melt the chocolate in the microwave or via bain marie technique if you're posh.  Careful not to overcook it.
  2. Add your ingredients into the mixture one by one and stir into a thick chocolate mixture.
  3. transfer the mix into a mould, I always use our silicone moulds as it is easy to get the chocolate out when it is set.
  4. flatten the mixture down so it is level and refrigerate for at least an hour.  Then chop into squares and enjoy!
