JERK RIB EYE STEAK WITH ICE RICE
Jerk seasoning on a rib eye and rice made with ice? Don't worry I haven't completely lost my mind, this is an awesome recipe for the barbecue. You don't even need to go to your indoor hob to cook your rice - you can do it right there on the barbecue!! With the lid closed, the ice melts creating steam with the end product being (drum roll please) extremely fluffy and soft rice. Add to that some chopped pepper and onion, cooked dirty in the coals and pineapple which has been grilled right there next to the jerk flavoured beef you'll feel like your on your holidays!
Ingredients
For the jerk paste
- 1 tbsp thyme
- 1 scotch bonnet pepper seeded
- 4 garlic cloves, peeled
- 4 spring onions diced finely
- 1 tsp ginger
- 1 tbsp dark brown sugar
- 2 tbsp distilled white vinegar
- 1 tbsp water
- 1/2 tsp allspice
- 1/4 tsp nutmeg
For the dish
- 1 onion
- 1 red pepper
- 1/2 pineapple
- 800 g rib eye steak
- 225 g white rice
- 300 g ice
- salt and pepper
Instructions

Combine the jerk marinade ingredients in a blender and combine to a smooth paste. Cover the rib eye in marinade and refrigerate for a minimum of 4 hours.

Preheat the grill to 150C.

Place the onion and pepper directly in the coals turning occasionally until blackened all over.

heat some oil in a cast iron pan on direct heat and add the rice. Season with salt and pepper. Tip the ice directly on to the rice covering completely.

Place the rib eye over indirect heat. Close the llid of the barbecue to allow the rice to steam and the internal temperature of the steak to reach 47C. This should be approximately 30 minutes.

Take the steak off to rest and give the rice a stir.

Allow the direct heat to increase to 230C and reverse sear the side approximately 2 minutes per side.

Remove the steak from the grill to rest once more and sear the pineapple over direct heat for approximately 2 minutes per side.

Once the rice has cooked through remove from the heat. Chop the pepper, onion and pineapple and add to the rice.

Slice the steak and serve over the rice allowing those juicy steak juices to run.
