MAPLE SYRUP CORNBREAD
A decent cornbread should be a mandatory staple of any barbecue table. It most certainly is at our house. If we're having folks round for barbecue you can guarantee the missus will treat us all to a cornbread. Well this time she has outdone herself on an epic scale utilising one of my favourite ingredients - MOOSE MAPLE BUTTER as the base of her creation to concoct a maple syrup cornbread. Serve with your salty barbecue favourites, this is bound to be a crowd pleaser.
- 120 g (1 cup) plain flour
- 140 g (1 cup) corn flour
- 1 tbsp baking powder
- 1/2 tsp salt
- 70 g (4tbsp) MOOSE MAPLE BUTTER
- 70 g (1/4 cup) Maple syrup
- 225 ml (1 cup) milk
- 2 eggs
Preheat your cooking appliance to 220C / 425F.
Measure out the MOOSE MAPLE BUTTER into a cast iron skillet and place in the oven to melt.
Whilst waiting for the butter to melt, place the dry ingredients into a mixing bowl and stir to combine. Created a well in the middle.
In another mixing bowl add the wet ingredients including the melted butter and whisk to combine.
Pour the wet ingredients into the well of the dry ingredients and whisk to combine.
Pour the batter into the cast iron skillet which has been greased with the melted MOOSE MAPLE BUTTER.
bake for 20 - 30 minutes until a skewer comes out clean.
Allow to cool for approximately 10 minutes before slicing and serving.
