MEAT DUST FAJITA CHICKEN

Chicken fajitas are a weekly staple at the Shack Central. So versatile and healthy, with the added kick of our Meat Dust seasoning they are a firm favourite. We always use thighs, but you can of course use chicken breasts if you prefer.

Ingredients
  • 8 Chicken thighs
  • Jack’s Meat Dust Multi Purpose Seasoning
  • 1 red pepper sliced thinly
  • 1 large white onion sliced thinly
  • 8 flour tortilla wraps
Instructions
To Make the chicken thighs
  1. Preheat the grill to 200°C.

  2. Coat the thighs all over in Meat Dust multi purpose seasoning.
  3. Place the chicken thighs over the heat and grill until coloured, then flip.
  4. Remove from the grill once the thighs reach 75°C.
  5. Allow to rest for a few minutes before slicing into strips.
To make the fajita vegetables
  1. Preheat a cast iron pan over your barbecue with a tablespoon of oil.
  2. Add the pepper, onions and and sauté, stirring occasionally so they don’t stick.
  3. Remove the the vegetables whilst still al dente but cooked through.
To assemble the fajitas
  1. Add strips of chicken on top of a flour tortilla.
  2. Add a good helping of fajita vegetables.
  3. Add your favourite fajita toppings, such as salsa, sour cream, guacamole and cheese.
  4. Tuck in and enjoy with friends and family.
