NEAPOLITAN COOKIES

Who doesn't love the tastes of chocolate, strawberry and vanilla altogether? mmmm reminds me of those neapolitan wafer icecream wafers from the 90s. So full of nostalgia I lovingly bring to you these awesome little neapolitan cookies. Fun to make and even better to eat.

Ingredients

  • 350 g plain flour
  • 1/2 tsp baking powder
  • 1/2 tsp salt
  • 250 g butter
  • 250 g sugar
  • 2 eggs
  • 2 tsp vanilla extract
  • 2 tbsp strawberry jam
  • 40 g almond flour or ground almonds
  • 2 drops pink food colouring
  • 2 tbsp cocoa powder
  • 30 g melted dark chocolate

Instructions

  1. combine the flour, baking powder and salt in a bowl and set to one side.

  2. Using your stand mixer with paddle attachment combine the butter and sugar on medium high until creamy.

  3. Add the eggs and vanilla and beat on high, scrape down the sides of the bowl until all is mixed in.

  4. Add the dry ingredients and turn the stand mixer down to low until everything is mixed together.

  5. Divide the dough into 3 equal portions . Keep one aside which is the vanilla layer and is good to go already.

  6. Use one of the portions of dough for the strawberry layer. Add the jam, almonds and food colouring and mix together to a nice pink colour.

  7. Take the last dough portion and add the cocoa and melted chocolate and mix together.

  8. Line a loaf tin with grease proof paper and cut the paper so it is hanging over the sides to make it nice and easy later to pull the dough straight out of the tin.

  9. Layer your flavours by adding the doughs one at a time in nice straight layers. Whatever combination you like, I went for strawberry, then vanilla, then chocolate.

  10. Get the loaf pan in the fridge for 3 hours or if your strapped for time you could even go in the freezer for an hour.

  11. When ready to bake preheat the oven to 180C. Get the loaf pan out of the fridge and use a sharp knife to cut into rectangle cookie shapes. These do puff up a bit so nice small rectangles will get you a decent size cookie.

  12. Grease two baking trays and layer the cookies giving them space to rise in the oven.

  13. Bake in the oven for 12 to 15 minutes keeping an eye on them to make sure they don't start burning.

  14. Remove from the oven and allow to cool slightly before sittin down with a nice cookie and your favourite Backstreet Boys album.
