PEANUT BUTTER AND JAM POPCORN

What better way to Netflix and Chill than with a fresh batch of popcorn.  And no I'm not talking about that microwave rubbish with all the extra additives... we're talking homemade all the way.  Fresh corn kernels popped in bacon fat and then mixed with a coat of crunchy peanut butter and strawberry jam.  Ace.

Ingredients

  • 3 tbsp bacon grease or coconut oil, olive oil or butter
  • 1/2 cup popcorn kernels
  • 2 heaped tablespoons peanut butter
  • 2 heaped tablespoons Strawberry Jam

Instructions

  1. On a medium heat, heat the bacon grease in a large saucepan with a lid until it has completely melted.

  2. When the fat has melted drop in two kernels.  This is to check when the fat is hot enough to add the rest of the popcorn.

  3. When those two kernels have popped, pour in the half cup of kernels and put the lid on.  Pretty important step unless you want popcorn flying around your kitchen.  Watch in amazement as the fireworks go off inside the pan.  

  4. Gently shake the pan every couple of seconds to ensure none of the kernels burn.  When the popping slows down considerably the popcorn is done.

  5. Heat the peanut butter and the jam in the microwave for a minute and stir.  Allow to cool slightly.

  6. Add half the popcorn to the peanut butter and jelly mixture.

  7. Transfer to a lined baking tray until it has cooled completely.

  8. Add a good crack of salt to the popcorn left in the saucepan.

  9. Mix the two popcorns together for a salty sweet combination!
