PIRI PIRI LAMB CHOPS
Move over piri piri chicken, you're old news. Jazz up some lovely lamb chops with a home made piri piri marinade for a delicious Portuguese style meal.

Ingredients
For the piri piri marinade
- 2 lemons
- 100 ml white vinegar
- 100 ml oil
- 6 cloves garlic crushed
- 1 tsp onion powder
- 1 tsp cumin powder
- 1 tsp ginger
- 1 tbsp salt
- 3 tbsp paprika
- 1 red pepper roughly chopped
- 1 pack birds eye chillies
- 1 kg single lamb chops
Instructions

Preheat the grill to 230C.

Juice and zest the lemons. Add to a blender along with all of the other piri piri marinade ingredients.

Blitz the ingredients in the blender until completely smooth.

Use a zip lock bag to marinade by adding the lamb chops and the marinade and ensure the sauce is distributed evenly.

Allow to marinade for at least 30 minutes (overnight if possible).

Use a meat hammer to level the chops out to equal thickness to ensure they all cook at the same rate.

Place the chops down on direct heat for approximately 2 - 3 minutes per side. Keep hold of your bag of marinade.

Remove chops to indirect heat and brush over with some marinade.

Cook for a further 5 minutes before removing and serving with a coriander garnish.
