STEAK AND EGGS WITH A TWIST

Have you ever considered combining bubble and squeak with a good quality steak for breakfast? This recipe is perfect if you have leftovers from your roast dinner that you don’t want to go to waste by pairing with the classic steak and eggs breakfast for a great start to the day.

Ingredients
- 1 Sirloin Steak
- Leftover Vegetables from Roast Dinner eg potatoes, parsnips, carrots, peas etc
- 1 Egg
Instructions

Remove steak from packaging and pat dry, removing any moisture to help create a lovely crust.

Season the steak liberally with salt

Add leftover vegetables to a food processor. Pulse until combined.

Using a ring mould to form the veg mixture into hockey puck shaped discs.

Heat a small amount of oil in a frying pan and add your bubble and squeak to the pan. Allow to cook for approximately 3 minutes per side.

(Optional) add a knob of butter to assist the browning process.

In a separate pan heat some oil ensuring that the pan gets searing hot.

Cook the steak for approximately 2 minutes per side.

Remove from heat and allow to rest.

In the steak pan add some more oil and allow to get hot, then crack an egg and fry until the yolk is cooked.

Slice the steak and assemble your breakfast.
