SWEET POTATO FRIES

I do love me a chip but every now and then I do fancy something a little bit different but still chip like and these sweet potato fries are the perfect answer. They are the perfect accompaniment to any salty barbecue dish offering up that delicious sweet and salty combo of perfection.

The magic ingredient for the perfect sweet potato frie is the addition of cornmeal which gives gives them a lovely crunchy coating perfect for dipping in barbecue sauce.

Ingredients

  • 4 sweet potatoes
  • 2 tbsp vegetable oil
  • 60 g coarse cornmeal

Instructions

  1. Preheat the barbecue/ oven to 200C.

  2. Scrub the potatoes and cut into fries ensuring that they are all the same size so that they cook at the same time.

  3. Add the vegetable oil to a bowl and the cornmeal to a separate bow. Coat the fries in the oil first, then the cornmeal.

  4. Assemble the fries on a roasting tray ensuring that they have speace between them so that they all get crunchy.

  5. Place the fries into the barbecue and cook for approximately 25 minutes, turning occasionally untill super crunchy, then enjoy!
