T BONE STEAK WITH MUSTARD AND HERB CRUST

This T-Bone Steak with Mustard & Herb Crust is all about bold flavour, proper fire cooking and food that’s meant to be shared. Thick, juicy T-bones are brushed with a punchy mustard, garlic and herb crust, seared hard for a caramelised exterior, then finished gently to keep the centre perfectly tender. They’re served alongside a generous rustic sharing board of charred corn, grilled little gem, tomato and mozzarella, and fluffy jacket potatoes finished with a cool Real Ranch sour cream. Laid out on a big wooden board with melted butter or mustard for dunking, it’s a relaxed, indulgent feast that’s as much about togetherness as it is about great steak.

Ingredients
For the T-Bone:
  • 2 x T-Bone steaks 300–400g each
  • 2 tbsp Dijon or English mustard
  • 1 tbsp fresh rosemary chopped
  • 1 tbsp fresh thyme chopped
  • 1 clove garlic minced
  • Olive oil
  • Salt & black pepper
For the Rustic Sharing Board:
  • 2 little gem lettuces sliced in half
  • 2 ears of corn husks removed
  • 2-4 large tomatoes sliced
  • Sliced mozzarella cheese
  • 2 large baking potatoes
  • 100 ml sour cream
  • 1 tbsp Jack’s Meat Shack Real Ranch
  • 2 tbsp olive oil
  • Salt & pepper
Instructions
  1. Prepare the grill at 200°c and set up for two zone cooking.

  2. Prepare the rustic sharing board
  3. Brush corn with olive oil and season.
  4. Toss sliced tomatoes in olive oil, salt, and pepper.
  5. Mix the sour cream with the Real Ranch and set aside.
  6. Give the potatoes at least an hour to bake whilst
  7. Prep the T-Bone by mixing mustard, herbs, garlic, and a drizzle of olive oil.
  8. Brush over T-Bone steaks, season with salt & pepper.
  9. Sear steaks for 2–3 mins each side on direct heat for a caramelised crust.
  10. Move to indirect heat, cook for 4–6 mins per side for medium-rare (adjust for thickness).
  11. At the same time, cook the corn, and lightly grill the tomatoes and sliced gem lettuce on indirect zones until tender and slightly charred.
  12. Assemble the Rustic Sharing Board: Arrange the jacket potatoes topped with Real Ranch dip, charred corn, grilled tomatoes topped with mozzarella, and lettuce on a large wooden board.
  13. Place a small pot of melted butter or mustard dip in the centre.
  14. Slice T-Bone steaks and arrange alongside the sharing sides for an ultimate comfort feast.
