TEQUILA & LIME CHICKEN WINGS
This is one of the first recipes which I cooked with when starting out on my culinary escapades and still one of my favourite marinades for chicken wings. I prefer not to separate the drums and flats for this recipe and keep them whole, but of course you can do this if you prefer.
These are perfect to share up to a crowd on a game day or even as a starter at a big barbecue event. Just save a shot or two for drinking!
Ingredients
- 120 ml Tequila
- 120 ml olive oil
- 1 tsp chilli seeds
- 1 lime juice and zest
- salt and pepper
- 1 kg chicken wings
Instructions

Combine the marinade ingredients in a mixing bowl. Add the chicken wings and mix ensuring the wings have an even coating.

Cover and marinate in the fridge for 2 to 4 hours.

Heat the grill to 200C. Add the chicken wings when fully heated on direct heat for 10 inutes to get a bit of crust then move to indirect heat.

Turn the wings occasionally to prevent from burning and remove when the internal temperature reaches 75C.
Recipe Notes
As there is citrus in this marinade it is best to keep to the recommended 2 - 4 hours of marinating time.
