DIRTY CAJUN CHICKEN LIVERS WITH SMASHED CORNBREAD

Chicken livers don’t get the love they deserve… and honestly, it’s a bit of a crime.

They’re cheap, packed with flavour, and when you cook them right, they’re rich, buttery and borderline indulgent — but for some reason, they still get overlooked in favour of the “safe” cuts.

This dish is here to fix that.We’re going full Dirty Cajun with them — hot pan, big seasoning, a bit of attitude. The livers pick up all that spice, crisp up on the outside, stay soft in the middle, and soak in every bit of smoky, punchy flavour from the grill.

Then alongside… smashed cornbread. Not neat slices — we’re talking broken, crispy-edged chunks that have soaked up heat from the pan and are ready to catch all those juices.

And then the finisher…Hot honey.Sweet, sticky, a little bit of heat — cutting through that deep richness of the livers and bringing everything together in one slightly chaotic, ridiculously good bite.

It’s bold, it’s unapologetic, and it’s a proper reminder that some of the best BBQ isn’t about expensive cuts……it’s about knowing what to do with the ones everyone else ignores 🔥

Ingredients

For the Cajun Chicken Livers

  • 500 g chicken livers trimmed & patted dry
  • tbsp Cajun seasoning
  • 1 tsp smoked paprika
  • ½ tsp garlic powder
  • Salt & black pepper
  • 2 tbsp neutral oil
  • 2 tbsp butter
  • 2 garlic cloves minced
  • 50 ml bourbon optional but highly recommended for theatre
  • 1 tbsp honey
  • 1 –2 tbsp hot sauce
  • Juice of ½ lemon
  • Handful fresh parsley chopped

For the Smashed Cornbread

  • 120 g fine cornmeal
  • 80 g plain flour
  • 1 tsp baking powder
  • ½ tsp salt
  • 1 tsp sugar optional
  • 1 egg
  • 150 ml buttermilk
  • 2 tbsp melted butter
  • 2 tbsp milk only if needed for looseness

For the Hot Honey Butter

  • 50 g butter
  • 1 tbsp honey
  • ½ tsp chilli flakes
  • Pinch sea salt

Instructions

  1. Prepare the grill by preheating to 200°c and setting up for two zone cooking. Preheat a cast iron pan.
  2. To make the cornbread smash bread whisk the dry ingredients in a bowl.
  3. In another bowl whisk egg, buttermilk and melted butter.
  4. Combine the mixtures until thick but scoopable. It should resemble thick drop scone batter — not runny, not dough.

  5. Rest for 10–15 minutes.
  6. To make the honey butter, melt the butter gently on indirect zone. Stir in honey, chilli flakes, salt and keep warm.

  7. Make the smash breads before the livers which take minutes to cook. Oil your hot cast iron generously.
  8. Scoop 2–3 tablespoons of mix per bread straight onto the hot surface.
  9. Once they begin to rise and harden slightly press flat with a press (light oil on the press helps). You want thin, rustic discs — about ½ cm thick.
  10. Cook 2–3 minutes until the edges are golden and crisp. Flip and cook another 2 minutes.
  11. Brush generously with hot honey butter. Repeat until mixture is gone.
  12. To make the chicken livers start by patting them until they are completely dry.
  13. Toss in Cajun seasoning, paprika, salt, pepper in a bowl.
  14. Heat cast iron screaming hot over direct zone and add plenty of oil.
  15. Lay livers in one layer in the cast iron pan. Don’t overcrowd.
  16. Sear hard 2 minutes.
Flip. Another 1–2 minutes. They should be deep brown on the outside with a slight blush inside.
  17. Add butter and garlic. Let butter foam.
Pour in bourbon carefully.
Let it flame off (stand back) then stir.
  18. Add honey + hot sauce.
  19. Let it bubble and reduce slightly so it becomes sticky and glossy then finish with lemon juice and parsley.
  20. Move to indirect heat for 1 minute if you want to slightly tighten sauce.
