Instructions
Set up the grill at 135°c, two zone cooking using a mixture of charcoal and wood for a smoky flavour.
Remove the membrane from the back of the ribs. Rub with olive oil and coat generously with the meat dust.
Place the ribs in the grill on indirect heat and smoke for 3 hours until tender, misting occasionally with apple cider vinegar for moisture.
After approximately 3 hours (or when the bones are protruding from the meat), brush the ribs with BBQ sauce and place on direct heat for 10 minutes to caramelise.
Cut the loaf in half and brush with melted butter and garlic powder. Toast on direct heat grill until golden.
Place cheddar slices on the bottom half of the bread. Remove the bones from the ribs and lay the entire slab onto the sandwich. Top with coleslaw, pickles, and red onion.
Close the sandwich, slice into portions, and serve immediately for the ultimate BBQ experience.
