GRILLED HALLOUMI & MEATBALL SKEWERS WITH HARISSA DRIZZLE
Why it’s banging: Golden halloumi + juicy meatballs on skewers = party. Throw some peppers, onions and courgette (or swap as needed) on the grill too and you’ve got a full plate, minimal clean-up, and big gas BBQ energy without the drama.
12small meatballshomemade or good-quality shop-bought
Olive oil
Salt & pepper
Optional homemade meatball mix:
500gpork or beef mince
1egg
30gbreadcrumbs
1garlic cloveminced
1tsporegano
Salt & pepper
For the grilled veg (do on a tray or skewers):
2red pepperschopped
1red onioncut into wedges
courgettecherry tomatoes, or aubergine
Olive oilsalt, lemon juice
1TbspReal Ranch seasoning
For the Harissa drizzle:
1tbspharissa paste
1tbspolive oil
1tsphoney or maple syrup
Juice of ½ lemon
Pinchof smoked paprika
Instructions
Preheat your BBQ, Medium heat across the whole grill (200–220°C), lid down.
Mix together all of the meatball ingredients, roll into 3cm balls, chill for 15 mins to firm.
Thread the halloumi chopped into chunks and the meatballs alternately onto skewers.
Brush with oil and season.
Place meatball skewers on the grill, turning regularly — around 10–12 mins until meatballs are cooked and halloumi is golden.
Preheat a large cast iron pan ready for the vegetables.
Chop and prepare all of the vegetables and season with the oil, honey, lemon and ranch seasoning.
Place the vegetables in the cast iron pan and sizzle, turning occasionally for 8–10 mins, until softened and charred.
To make the drizzle, stir the harissa, oil, lemon, honey, and paprika in a bowl. Taste and tweak.
Plate your meatball & halloumi skewers over the grilled veg.
Drizzle generously with harissa sauce and hit with fresh herbs or feta if you’re feeling it.
