A Juicy Lucy burger is a deliciously unique spin on the classic cheeseburger, with the cheese stuffed inside the beef patty instead of on top. When cooked, the cheese melts, creating a molten, gooey center that oozes out with each bite. There are some key elements to my take on a Juicy Lucy Burger:
-a good mince with a high fat content to ensure that the burger fat is nicely dripping down one's arms from and the first bite
-cream cheese to produce an oozy interior
-cheddar to add sharpness and depth
-streaky bacon, because its bacon and needs no explanation
And if you're not dribbling right now then you may just need your head checking.
Preheat the grill to 200C.
in a mixing bowl mix the cheeses together.
add the mince to a mixing bowl, add the Cowboy Coffee multi purpose rub and give it a mix.
divide the mince into four 125g balls and press into patties using a burger press.
add a spoonful of cheese onto the centre of one of the patties allowing about 2cm around the edge. Top with another patty and seal the edges together.
wrap slices of streaky bacon around the patty ensuring that all the beef is covered.
Repeat for the second monster patty and then pop them on the grill on indirect heat to allow the bacon fat to render.
grill the patties for approximately 10 minutes per side until the internal temperature of the meat reaches 55C.
Serve in buns with your favourite burger condiments and enjoy!
