SCOTTIE'S BIS-COFFEE FUDGE SQUARES
I can't take the credit for this little wonder, this is all Mrs Shack's doing, although I can claim my stake on the recipe being the Chief recipe taster.
The Missus put this together in honour of our very good friend Scott drawing on his love of Biscoff. And all things sweet really. I was a bit dubious when she suggested making edible Christmas gifts this year. Surely when the supermarkets are selling fudge in abundance, why bother? That was until I tried one. Forget that almost artificially hardened fudge crap you can get out of the Pick n Mix bin, this was creamy and biscuitty with a hint of coffee looming in the background. All topped with a crunchy nut topping.
I will never buy store bought again.

Ingredients
- 400 g salted caramel frosting or vanilla if you can't get caramel
- 400 g Biscoff Spread
- 1 shot espresso
- chopped nuts
Instructions

Grease a square baking dish, or use the super easy silicone baking trays like we do - the fudge will pop right out.

Empty the jar of Biscoff and the frosting into a mixing bowl and microwave for one minute.

Add the espresso and mix until combined then spread evenly in the baking dish.

Cover the top with the nuts and refrigerate overnight.

Cut into bite size squares, perfect for boxing into gifts or spoiling yourself with a nice cuppa!
