HASHBROWN SMASH TACOS
This one takes the taco and boots it into breakfast. A golden, crispy hash brown shell becomes your edible plate, cradling juicy smashed sausage patties, melted cheese, and whatever sauce your soul desires. It’s the kind of dish that makes you question all your life choices — mainly why you haven’t made this sooner. Perfect for those mornings where toast feels like a cop-out and tacos deserve a northern upgrade.
Ingredients
  • Frozen hashbrowns
  • 350 g Sausage meat
  • 200 g Grated cheese
  • Soft flour tortillas
  • Chipotle mayo or ketchup-mayo mix
  • Pickled Jalapeños
  • Spring onion finely sliced
  • Hot sauce
Instructions
  1. Preheat the grill with a flat griddle or tray to 200°c and set up for direct grilling.
  2. Grill the frozen hashbrowns over the flat griddle on direct heat for 8–10 mins, flipping until golden and crisp.

  3. Whilst the hash browns are cooking shape the sausage meat into thin discs (a bit smaller than the tortillas) and place them directly onto the hot plate. Press them down with a spatula or grill press for a smash effect.

  4. Once the hashbrowns are crisp, flip them, sprinkle over grated cheese, and let it melt.
  5. Warm your tortillas briefly on the grill, then build your tacos. cut into the tortilla halfway allowing it to be folded, then add the following into each corner of the circle; 1. sausage patty 2. cheesey hash brown 3. lettuce and jalapeños 4. BBQ sauce.

  6. Fold and serve while everything’s still hot and melty. Eat immediately. Regret nothing.
