SEAFOOD BROIL
“Boil” meets “Grill” = Broil. It’s a bro’d-up barbecue seafood party. Let’s go.

Ingredients
🔥 For the BBQ Seafood Broil:
  • 500 g large raw prawns shell-on
  • 500 g mussels cleaned
  • 500 g baby potatoes parboiled
  • 2 corn cobs cut into chunks
  • 1 red onion quartered
  • 1 lemon halved
  • Olive oil
  • Salt & pepper
  • Smoked paprika
  • Optional: a few scallops or crab claws if you’re feeling fancy
🌶️ For the Broil Butter Sauce
  • 150 g unsalted butter
  • 4 cloves garlic minced
  • DIY seasoning: paprika celery salt, black pepper, cayenne
  • Juice of 1 lemon
  • 1 tbsp Sriracha
  • 1 tbsp Garlic & Herb Sauce
  • Handful of chopped parsley
  • Optional: a cheeky splash of beer
Instructions
Get the BBQ Hot
  1. Preheat the grill to medium-high 200°c, with a two-zone setup.
  2. Throw down a flat plancha or use a cast iron tray. You’re aiming for high heat and big sizzle.
Prep the Good Stuff
  1. Toss prawns, corn, potatoes, mussels, and onion in olive oil, smoked paprika, salt, and pepper.
  2. Arrange it all on the hot zone or in your tray over direct heat. Close the lid to steam and sear.
  3. Flip and stir every few minutes—this is chaotic, fun cooking. Mussels should open, prawns should go pink, and everything should char in all the right places.
Sauce Time
  1. In a small pan on the BBQ (or hob if needed), melt butter and add garlic.
  2. Stir in lemon juice, DIY seasoning, sriracha and garlic & herb Sauce.
  3. Let it bubble for a minute, then stir in parsley and a splash of beer.
  4. Taste it. It should make you want to drink it.
Bring it Together
  1. Once the seafood and veg are cooked through and lightly charred, pour over that Broil Butter Sauce like it’s the main event. Let it sizzle and glaze everything.
  2. Finish with a squeeze of grilled lemon and a sprinkle more parsley.
