- 100 g plain flour
- 2 eggs
- 250 ml milk
- Pinch of salt
- 1 tsp butter or oil for the pan
- 50 g cheddar grated
- 50 g mozzarella shredded
- 50 g Gruyère or Red Leicester grated
- 1 small onion thinly sliced & caramelised
- 1 tbsp butter
- Fresh parsley chopped
- For the Sauce:
- 3 –4 tbsp Burger Relish
- Optional salad leaves or baby greens
- Pickles or gherkins for crunch
- Cherry tomatoes halved

Whisk together flour, eggs, milk, and salt until smooth. Let the batter rest for 10–15 minutes.

Melt butter in a pan and cook sliced onions on low heat until soft, sticky, and golden. Set aside.

Heat a non-stick pan lightly with butter. Pour in a ladle of batter, swirl to form a thin layer, and cook 1–2 minutes per side until lightly golden. Repeat for remaining batter.
