THREE CHEESE CREPES

Soft, golden crepes loaded with a molten trio of cheeses and sweet caramelised onions, finished with a glossy drizzle of warm burger relish — this is comfort food with a punchy, indulgent twist. The delicate crepes act as the perfect wrap for gooey cheddar, stretchy mozzarella, and nutty Gruyère (or Red Leicester), while the slow-cooked onions bring a rich sweetness that balances every bite.

Ingredients

For the Crepes:

  • 100 g plain flour
  • 2 eggs
  • 250 ml milk
  • Pinch of salt
  • 1 tsp butter or oil for the pan

For the Filling:

  • 50 g cheddar grated
  • 50 g mozzarella shredded
  • 50 g Gruyère or Red Leicester grated
  • 1 small onion thinly sliced & caramelised
  • 1 tbsp butter
  • Fresh parsley chopped
  • For the Sauce:
  • 3 –4 tbsp Burger Relish

To Serve:

  • Optional salad leaves or baby greens
  • Pickles or gherkins for crunch
  • Cherry tomatoes halved

Instructions

  1. Whisk together flour, eggs, milk, and salt until smooth. Let the batter rest for 10–15 minutes.
  2. Melt butter in a pan and cook sliced onions on low heat until soft, sticky, and golden. Set aside.
  3. Heat a non-stick pan lightly with butter. Pour in a ladle of batter, swirl to form a thin layer, and cook 1–2 minutes per side until lightly golden. Repeat for remaining batter.
  4. Fill each crepe with the caramelised onions and three cheeses. Fold or roll, then briefly place under a grill to melt the cheese.
  5. Gently heat the Burger Relish in a small pan until slightly syrupy and warm — do not boil.
  6. Place crepes on a sharing platter. Drizzle warm relish over the top. Add optional salad, pickles, and cherry tomatoes around for presentation.
  7. Tear strips, share, and dunk for maximum indulgence — the warm relish adds a glossy, saucy punch to every bite.
